Our family has been going to Northern Michigan every summer for the past twenty years.  Every year we catch fresh salmon and try new recipes to make the most of our fresh catch.  This year we did two grilled salmon recipes that were pretty tasty. We did cedar plank salmon and a new twist on fish tacos which you can find here.  The cedar plank salmon instructions and step by step, pic by pic, foolproof instructions are below

Here’s an example of the salmon we catch every year.  In the pic below, from left to right are me (Tom), my best friend, Brad Barker, and my dad Gary:

Grilled Cedar Plank Salmon Ingredients

  • 1.5 cups brown sugar
  • 3 tbsp course ground coffee
  • 1.5 tsp cumin
  • 1.5 tsp garlic powder
  • .5 tsp salt
  • .5 tsp pepper
  • 2 large salmon fillets
  • Cedar Planks (purchase planks that are marketed for cooking purposes that are unseasoned)

Soak cedar planks in water for approximately 60 minutes.  While the planks are soaking prepare a charcoal fire for direct grilling.

Combine all ingredients (except the salmon and cedar planks):

Cover the salmon with the combined ingredients:

Wipe the planks dry with a paper towel, place the plank on the grill, drizzle with olive oil then spread some of the rub on the plank:

Next place salmon on the plank and place a generous amount of rub over the top of the salmon:

Place the cedar plank salmon on the grill over medium to medium high heat (approximately 375 degrees) and close lid.  Grill for 20 to 30 minutes until salmon is done.  Grilling times will vary depending on size of fish.  Do not turn the fish.

As you can see the rub will cook off as the fat from the fish and the sugar combine forming a syrup that will run off the sides into the grill:

When done, carefully remove the grilled cedar plank salmon from grill and transfer to heat resistant surface.  Serve from the plank:

Cedar Plank Salmon

Salmon, seasoned and rubbed, cooked on the grill on a cedar plank

Ingredients

  • 1.5 cups brown sugar
  • 3 tbsp course ground coffee
  • 1.5 tsp cumin
  • 1.5 tsp garlic powder
  • ½ tsp salt
  • ½ tsp black pepper
  • 2 large salmon fillets
  • Cedar Planks purchase planks that are marketed for cooking purposes that are unseasoned

Instructions

  • Combine all the ingredients other than the plank and the salmon
  • Put the salmon in a flat container and cover with the combined ingredients
  • Place the cedar plank over a medium high grill and cover with any extra rub
  • Cook for 20-30 minutes until the desired doneness
  • Do not flip the salmon
  • Remove the plank carefully from the grill as it will be very hot and place on a heat resistant surface
  • Serve from the grilling plank

We’ve been making cedar plank Salmon for years and the best way is to keep it simple. Finely chopped rosemary, salt, pepper and some lemon. That’s it, you can’t go wrong. Oh and don’t over cook!
