Our family has been going to Northern Michigan for the past 35 years. Every year we catch fresh salmon and try new recipes to make the most of our fresh catch. This year we did two recipes that were pretty tasty. We did Cedar Plank Salmon which can be find by clicking here and a new twist on Fish Tacos which is Salmon Fish Tacos with Mango Salsa.

As in the cedar plank salmon post here is an example of the fish we bring in from Lake Michigan. From the left that’s me, Tom, my best friend Brad Barker, and my dad, Gary:

Salmon Fish Tacos with Mango Fish Salsa Ingredients
Tacos:
- Large salmon fillets
- Olive oil
- Salt and pepper
- Slap Ya Mama Original Cajun Seasoning
Mango Salsa:
- 7 Green onion ends trimmed
- 3 Poblano peppers cut in half and seeds removed
- 4 Fresh tomatoes, diced
- 2 Mangoes, peeled and diced
- Chopped fresh cilantro to taste
- Chopped fresh parsley to taste
- Splash of apple cider vinegar
- Generous drizzle of olive oil
Grill the green onion and poblano pepper until caramelized and tender:



Then chop and add to other salsa ingredients:

Cover and let stand while salmon is prepared and grilled.
Now time for the salmon:

Drizzle the salmon with olive oil, then season with salt, pepper and Slap Ya Mama to taste.
How to Grill Salmon Fish Tacos with Mango Salsa
Heat grill to medium to medium high heat (325-400) and cook for approximately 10 minutes, turn and cook 10 minutes longer (cook times will vary depending on size of fillet and heat of the fire). Slices of lemon are optional:

We purchased tortillas, either corn or flour work for this recipe. Use what you like best. After the fish is cooked place flour tortillas on the grill and cook for a couple of minutes on each side to warm them up but don’t cook too long or they will get hard and it will make it hard to wrap them around the contents of the taco:

Create a taco bar with the salmon, salsa, lettuce and tortillas. We used some of the cedar plank salmon for the tacos too:

Place fish on the tortilla, then salsa and enjoy your fish tacos!


The Cedar Plank Salmon received mixed reviews, but everyone loved the fish tacos. The next time we make the fish tacos I will change up the Mango Salsa recipe by adding fresh grilled pineapple.
