The kettle grill is an incredibly cheap way to jump into the grilling/BBQ game and cook in a wide variety of ways in one package. It can cook low and slow or hot and fast or a combination of the two known as the reverse sear method. I was the unofficial spokesman for the kettle grill and most of the early content on this website was cooked on one. I determined that brining ribs was the way to go on a kettle grill. Dad and I made meat lollies for the first time on a kettle. And we smoked our first fatty on the kettle. Not that kind of fatty! - [Meats](https://grillinfools.com/category/meats/) - Meats. Let’s face it, this is why we grill. Sure we have some vegetarian recipes on this site, but for the most part GrillinFools.com is a digital cathedral to meat. Anyone coming to this site is interested in kneeling at the altar of grill marks and juicy, savory protein on the regular. I’m not trying to be blasphemous here. This is all tongue in cheek. We don’t worship meat, but we do document a great many experiences cooking it! And we cover them all: beef, pork, poultry, lamb, seafood and even exotic meats and game and we cook them every which way we can from low and slow to hot and fast and sometimes both (think the reverse sear method). What we cook hot and fast are generally those higher end cuts that are already super tender and only need a little char to bring them to their fullest potential. And let’s not forget the burger/hot dog hybrid, the burger dog. We grill low and slow to take those tough meats and make them into something tender enough to eat (and not making them into stew or soup) without burning and/or drying them out. That low and slow process breaks down the connective tissues, which is what makes meat tough, and still keeps the protein juicy. It also includes ham, pork belly (which can be cured to make bacon), tenderloin, loin, bologna (which is way better than the beef stuff), sausage (also way better than the beef stuff), pork chops, and the oh-so amazing pork steak. The farther from St. Louis you are, the less likely you will know what this is. And let’s not forget the entire animal, because whole hog is maybe the most fun cookout there is. We have multiple whole hog recipes/processes including the traditional runner style cook and a butterflied pig. - [Poultry](https://grillinfools.com/category/meats/poultry/) - Poultry (mainly chicken and turkey) is not the sexiest protein but it is the healthiest and is a mainstay in my house, whether parted out into individual pieces, butterflied out (spatchcocked) or whole birds. It is an art to keep poultry juicy and delicious. You can tell a lot about a pitmaster by how well he cooks his smoked poultry. In fact, one of the two main things I order at a BBQ restaurant is smoked turkey (the other is brisket burnt ends). One bite of that turkey will tell me if the rest of the menu is worth trying. Some other notable chicken recipes include mayo magic chicken, spatchcocked chicken with Alabama white sauce, orange soda hot wings, and ancho coffee wings with adobo honey butter. Turkey being the standard bearer for Thanksgiving celebrations all across the United States, this one item may be the single most important thing you grill all year. Face it, there’s more riding on your Thanksgiving bird than any other cookout. Nobody wants to be the guy ordering pizza for family and friends on Thanksgiving because he wrecked the gobbler. We have a bunch of options on this front from a turkey breast recipe (for smaller gatherings) to the traditional whole turkey with all the tricks and techniques to make sure so many disparate cuts get done at the same time (which is my go to Thanksgiving Turkey Recipe) to beer can turkey! - [Primo](https://grillinfools.com/category/grills/primo/) - The Primo ceramic grill is a kamado style grill which is a 3,000 year old design for a grill originating in Japan. The design holds temps for 20 hours on a single load of charcoal set to low and slow or can be cranked up to wicked high temps to get that perfect sear on their cast iron grill grates. The Primo improved on that timeless design with a very simple, and yet ingenious tweak in that the Primo folks simply widened the grill. Instead of a circle, it’s now a wide oval which allows for the grill to be loaded with slabs and slabs of ribs, something that is not attainable even with a rib rack on most kamados. That smoke flavor on top of the browning and caramelizing the proteins is divine, except that once we sear the meat, it won’t take on much smoke. Instead, smoke the meat first and then sear. Smoke until the protein reaches about 10-15 degrees shy of the desired final temp AND THEN sear to caramelize the proteins and brown the meat to get the best of both worlds. Also, it allows for even cooking with no grey band around the outer edges of steak by bringing the temp up slowly. I also made meat butter (AKA cowboy butter AKA roasted bone marrow). It’s a char grilled oyster making machine whether oysters picante or with butter and wine. If you want a wider variety of seafood, try this seafood butter boil. So basically, this cooker is outstanding for hot and fast so if you cook a lot of steak and seafood (and a thick wallet), this is the grill for you! - [Beef](https://grillinfools.com/category/meats/beef/) - Beef is the king of all grilling and barbecue. Both low and slow (brisket and beef ribs) and hot and fast (steaks and burgers). Although, nobility comes with a price tag. With the highest prices of all the proteins, beef necessitates proper planning and research before endeavoring to prepare these cuts. Steak is priciest of all the meats, particularly beef tenderloin/filet mignon/chateaubriand (which are all the same thing). But right behind them are the prime rib/rib eye, porterhouse, and NY strip. Not to mention the different grades and varieties like prime grade, grass fed or wagyu. We also discuss what to look for when perusing the meat counter and choosing a steak for dinner. While brisket used to be one of those cuts cast off by the rich because of how tough it was, being the breast of the cow, it is a heavily used muscle and thus full of connective tissue, it has shot through the roof in price as the legend of its gloriousness has spread throughout the land. And don’t get me started on beef ribs. The 99% of them are cut across the bones into little tiny chunks rather than leaving them whole as plate ribs which means you almost have to personally know a butcher in order keep them from being miniaturized. This is Dad’s go to grill for close to 40 years. He had one last more than 25 years and the replacement is going on 15 years old. Keep in mind, both grills were stored in the garage completely out of the elements. I am in no way saying that you will experience the same longevity if the grill is kept outside for 15 years. The biggest downside of this cooker is availability. Place the meat on the other end of the grill so it slow cooks and smokes without burning. Those pics show how far we’ve come and the recipes are rock solid. - [Gas Grill](https://grillinfools.com/category/grills/gas-grill/) - The most popular fuel source for all grilling enthusiasts is gas, despite that the gas grill is on the receiving end of the most hate of all the fuels. I’ll admit I was a charcoal snob for many years… and then I had kids. The gas grill is just too convenient for someone coming home from work and would like to get that grill fix without having to wait until after 11 pm to eat. I now use a gas grill more than any other grill. The way I see it is this. The gas grill is that weeknight cooker when I have limited time to cook outside, but I can get my grill fix by throwing on some burgers (or even some sliders), or slap down some steaks (and spoon over some chimichurri) or even char-grill some oysters. The charcoal or pellet grill is my weekend grill when I have more time for those long, multi hour cookouts. Some of you prefer the smoke from a charcoal grill, and I agree that smoke flavor is delicious, but gas grills are not devoid of smoke. The simplest way to add some smoke flavor to a gas grill is a wooden plank. Dijon Dill Salmon on a wood plank is amazing. Here’s another planked salmon recipe and a bonus. And if planking salmon is so magical, why can’t we do it with other proteins. Like planked steak or planked pork chops. We have even done planked Atomic Buffalo Turds (ABT’s). And you can flat out just smoke on a gas grill. And I have to say, probably the best meal I have ever grilled was on a gas cooker. Lobster topped filet mignon.
