We started with French fries cooked in wagyu beef tallow which were a HUGE hit both with our taste buds along with those of you who came to check out the recipe. Then, we upped the ante with beef tallow sweet potato french fries. With FANCY beef tallow French fries we fry up some russet fries in that wagyu beef tallow and top them with both grated and shaved Parmesan cheese, truffle oil and some fresh parsley. Of course we pair it with a fat burger because fries without a cheeseburger is a half-empty hole.

Also, keep in mind that you can do these on the stove too. Indeed, I won’t judge!

Fancy French Fries Ingredients

  • 12-18 ounces wagyu beef tallow
  • 2-3 pounds russet potatoes, washed
  • Salt to taste
  • 2 ounces fresh grated or shaved Parmesan cheese
  • 1 ounce of truffle oil
  • 1 ounce fresh parsley, rough chopped

Before we get too far ahead of ourselves here:

Why Fry with Beef Tallow?

First, because beef tallow has a high smoke point at around 420F. Second, because it is healthier than the processed vegetable oils. Finally, because beef tallow tastes better than vegetable oil. Did I mention that it also makes for the best burger or steak crust of anything I’ve ever seen. Check out the flavor crust on these steaks I cooked on cast iron with wagyu beef tallow

How to Make Fancy Beef Tallow French Fries

Set the grill for medium-medium high and set a cast iron pan over the hot fire. Drop in a few fat dollops of wagyu beef tallow to melt:

While the tallow melts, slice the russet potatoes. I left the skins on and cut them fairly thin:

Normally I wait for the tallow to hit 350F before I drop the soon to be fries in, but at 340F, we had a sample fry (in the background) sizzling hard so we went for it.

Remember, don’t drop the potatoes in right as the temp hits 340F-350F. We want the temp to hit that and plateau.

Because if it goes up another 80-90 degrees, it’s going to be a smoky mess:

It will take a few minutes for those french fries to float in the beef tallow.

When they float, the fries are done. While they are frying, time to make a fat Cheeseburger.

A cast iron griddle is set on the gas grill and a tablespoon of beef tallow is melted on it:

First, toast the bun, in this case a pretzel bun:

Don’t go far. Those buns will toast in less than a minute:

Then slap down a burger and when it is flipped, check that crust!

Fries are floating in my cast iron skillet so let’s assemble this meal:

Salt the fries and then grate the Parmesan on top:

Next, assemble the burger:

Now, drizzle the truffle oil:

Fancy Beef Tallow French Fries Rundown

Beef tallow French fries are now my personal favorite fries. And these fries with the Parmesan and truffle oil take those fries to another level. I wouldn’t do these fries every time. These are a little too rich for that, but these are definitely a gourmet experience that you need to experience.   • 12-18 ounces Wagyu beef tallow
  • 2-3 pounds Russet potatoes washed

Instructions

  • Set the skillet over a medium-medium high burner and drop in the beef tallow.
  • Slice the potatoes into French fries
  • When the tallow plateaus between 340F-400F drop in the French fries
  • When the fries float (about 10 minutes) remove the French fries and place in a bowl line with paper towel
  • Season with salt and grate the parmesan over the fries
  • Toss the fries to coat with the cheese and the salt
  • Repeat seasoning and adding cheese 1-2 more times
  • Plate the French fries and drizzle truffle oil and sprinkle fresh parsley over the top
  • Optional - using a vegetable peeler or cheese peeler, sliver more cheese over the Fancy Beef Tallow French Fries
  • Serve with a Cheeseburger
