Grilling isn’t just for dinner, anymore. Grilling breakfast is amazing. It’s usually much cooler than late afternoon July and August. Frying up a pound of bacon doesn’t leave the house smelling like grease for three days. The mosquitoes aren’t usually out till the evening. It’s fantastic. We call it, “Deck Breakfast.”

Speaking of breakfast, check out these potato cakes we cook inside or out which make for an epic breakfast side with the leftover mashed potatoes from Thanksgiving or Christmas. We love these so much we just buy premade mashed potatoes at the grocery store specifically for this dish.

Cinnamon Roll Pancakes Ingredients:

  • 2 packages of store bought cinnamon rolls, 8 rolls in each package – icing optional
  • Wax or parchment paper
  • Burger press
  • Drizzles (we used chocolate, caramel and strawberry)
  • Sprinkles
  • Bacon and Eggs – optional

When we say packages of store bought cinnamon rolls, it’s exactly how it sounds. We’re talking about that cardboard tube you unravel the label on the outside and it pops and scares the crap out of you. Er, not me. I mean other people.

Then, slap them in a greased baking dish or on a cookie sheet and toss them in the oven for 12-15 minutes. When done, spread the included icing on top. Those cinnamon rolls.

Here’s what one looks like raw:

And this is the other side, on the flat top grill, before it gets the burger press treatment. That one at the top of the pic below is not a cinnamon roll pancake. It’s a potato cake:

Crank up your flat top to between 350F-400F and grab a burger press

Cinnamon Roll Pancakes are Sticky

Also, when you flatten out this sticky, raw dough, it will stick unless you grease the bottom of the burger iron or spatula. And you will have to keep greasing the bottom every 2 of these you smash because the oil will stick to the cinnamon rolls.

Lay down a small sheet of wax paper (parchment paper works too) and then smash them. Peel back the paper and there sill be a flattened cinnamon roll pancake. Actually, patty paper is perfect for this.

How to Cook Cinnamon Roll Pancakes on a Flat Top Grill

Get the flat top grill or flat top griddle on a conventional grill up to between 350F-400F and then pop the can of cinnamon rolls. Set the cinnamon rolls on the griddle, spaced 4-5 inches apart. Set a small sheet of wax paper (parchment paper works as well) on each one and flatten out with a burger press or the back of a spatula. Check the underside of the cinnamon roll pancakes after 1.5-2 minutes. When they brown, flip them and wait another 1.5-2 minutes and flip again. When they have browned on each side, remove from the flat top and plate.

Top with: icing; butter and syrup; drizzles, sprinkles; or nothing at all. Additionally, top one pancake with an egg and a couple pieces of bacon and top with another cinnamon roll pancake for an utterly amazing sweet and savory breakfast sandwich.

Step by step, picture by picture foolproof instructions for Grilled Breakfast

Set the flat top grill or griddle (on top of a conventional grill) to between 350F-400F.

I cooked these on both when testing this recipe so you will see the two types of grills used interchangeably:

And no, that’s not the same flat top as above. I’m all about the flat tops these days. Seriously, flat tops are where it’s at, daddio!

Lay down the wax paper or parchment paper on each one (or use one sheet for each one). I had to learn this lesson the hard way. I had to scrape the cinnamon rolls off the bottom of my burger press before I greased it.

The paper worked way better in a later cook, but I didn’t get any pics. Here’s what happens if you don’t grease the press/spatula or use the paper:

This Won’t Take Long

Once the cinnamon rolls are flattened, don’t walk away from the grill. It doesn’t take long for the pancakes to brown and thus, just a few moments after they do, all the sugars in the cinnamon rolls will begin to blacken. And that would ruin your grilled breakfast quick.

After 1.5-2 minutes, flip the cinnamon roll pancakes:

Here’s a pancake looking pretty on the flat top. Additionally, notice all that cinnamon and sugar is underneath there bubbling up:

Pro Tip ~ Make sure to have a straight edge metal spatula (which is actually a pancake turner, and not a spatula, but that’s another conversation). Otherwise, all that sugar and cinnamon is going to stick to the flat top and not transfer to the plate with the cinnamon roll pancake.

Finally, once the cinnamon roll pancakes are browned on both sides, serve and top with what you like.

We served them naked (the pancakes, not me):

Some were topped with butter and syrup.

Some pancakes were topped with the icing from the cinnamon roll container.

And others we topped with some drizzles (caramel and chocolate) which can be found at just about any grocery store:

Caramel, chocolate and strawberry drizzles:

Also, some got both drizzles and sprinkles:

Whipped cream is really good on these as well.

Accordingly, I recommend setting out a variety of toppings and let your family/friends/guests pick their favorites. Maybe set up a toppings bar and let the kids choose what they want.

Savory and Sweet

Conversely, if you are more of a savory grilled breakfast person, like myself, top one of these cinnamon roll pancakes with an egg and some crispy bacon and another pancake for a sweet and savory sandwich:

Cinnamon Roll Pancakes on a Flat Top Grill Recap

Browned and naked, these cinnamon roll pancakes are amazing. Add some sweets on top of the cinnamon rolls and these are positively sublime. Or add some savory ingredients and do a sweet/savory combo. Honestly, you just can’t go wrong with these. They are simple and heaven at the same time.

Scott Thomas, the Original Grillin’ Fool, was sent off to college with a suitcase and a grill where he overcooked, undercooked and burned every piece of meat he could find. After thousands of failures, and quite a few successes, nearly two decades later he started a website to show step by step, picture by picture, foolproof instructions on how to make great things out of doors so that others don’t have to repeat the mistakes he’s made on the grill.
