Mike Peters

Mike Peters has been doing competition BBQ for more than a dozen years. In that time he has competed all over including qualifying for and competing in the Jack. That’s the Jack Daniel’s World Championship Invitational which is one of the most prestigious BBQ contests on the planet. This guy, and his lovely wife Christine, have been preaching the “Gospel of Q” all across the country for the last five years as tour hosts of the Great American Cookout Tour. That pretty much make them the Kansas City Barbeque Society ambassadors to the world. Mike was just named president of the KCBS which is the biggest society for BBQ and grilling enthusiasts in the world. Needless to say, I was honored to interview him and share what he had to say with my followers.

I personally loved his tip on the 5 minute marinade. I’m absolutely stealing that method as I am always forgetting to put meat in the marinade the night before. This allows me to get some of that great flavor even if I forget to put the meat in the bag with the marinade. Of course I enjoyed him talking about reverse searing as I’ve been preaching that for years. And the DIY condiments is something I need to do more often. Whatever I can do to set myself apart from the next guy is always welcomed. This is definitely one of those tips.

Great interview with a solid guy! Like that marinade technique, kind of like a poor mans tumbler, I’ll definitely be stealing that one.
