The Grillin Fools tackled this three different ways. The first was my take on the classic dish which can be found by clicking here. This is the second installment which was done by my father, Greg – Smokin’ on the Water, Thomas. He took one of our favorite methods for doing pork loin or brisket [...]

With St. Patrick’s day just around the corner and the typical fare of corned beef and cabbage on the menu, the Grillin Fools thought we would do these traditional favorites our way. My father and cousin, Greg – Smokin on the Water, and Tom – the Big Green Eggspert, will have their own twists on [...]

A previous post, Beer Butt Chicken Stew, featured the birds smoking on the grill over a pan of vegetables and broth which allowed us to capture all the flavorful drippings from the birds in the stew below. Now that “comfort food” weather has arrived I thought the same process should be applied to beef chuck [...]

Ahhhh, my favorite time of year is here. It’s officially Fall. The temp is dropping, soon the leaves will be too after that magnificent color change. The Cards are heading to the playoffs, football is back, well in other cities its back, no so much here in St. Louis. The Blues are in training camp, [...]

One of the hardest things to teach people about grilling is dealing with ever changing circumstances that may or may not be out of their control. In an effort to show that not all grilling is fatty pork or cholesterol filled red meat the Grillin Fools are trying to tackle the lighter side of grilling. We’ve been doing more veggies and fish lately and Dad decided to do this old favorite – Smoked Turkey Breast. Click below to see step by [...]

In July the Grillin Fools and 30 of our relatives went up to Michigan:
It wasn’t all sunsets, swans and salmon. Of course we did some grillin, chillin, and thrillin:
We may not have had much to work with (wait to you see the grills) but we still put out a mean product. And if we can [...]

One of my favorite pub appetizers is scotch eggs. Simply put they are hard boiled eggs wrapped in a layer of sausage, deep fried for a bit, split down the middle and served with a honey mustard dipping sauce. Not great for the arteries unless you are doing the Atkins thing, but delicious. I decided [...]

Spatchcocked? What the heck is spatchcocked right? When I first heard that someone I knew spatchcocked his chicken I thought he was doing something dirty. Not so. Spatchcocking poultry is simply butterflying a bird prior to cooking it. In my quest to try everything on the grill at least once I decided to give this [...]
